OpenJUMP is quite a productive alternative for digitizing especially when you learn to use the keyboard shortcuts. Unfortunately it does not show all kind of orthophotos well.

QGIS is not an exact copy of ArcMap. There's always a learning curve when you start with a new program. Of course it's slower to set up a map in an unfamiliar program, compared to one you have experience with. If you want help with a particular task in QGIS, please explain what you're trying to achieve instead of just mentioning which tool you would have used in ArcMap.

Reading the tutorial qgistutorials.com/en/docs/digitizing_basics.html may be useful. The scroll wheel for example is very useful when digitizing.
